Super Granola!!!










It a Bird, it's a plane! It's super granola! Or at least that's how you'll feel when you taste this super delicious, incredibly energizing, completely vegan, and possibly gluten free concoction!
Super Granola (5 cups)
4 cups rolled oats (gf if you wish)
1/4 cup coconut milk
1 tsp vanilla extract
2-3 Tbsp natural peanut butter
2.5 tbsp unsweetened coconut
1/2 tbsp light agave syrup or honey
1 tbsp flaxseed meal
1/2 cup applesauce
1/4 cup walnuts and almonds
3 oz raisins
Mix it all together and spread onto a pan very thinly and bake at 350 till crispy, about 30 minutes but time varies depending on your oven and pan size. You can also make it into bars by packing it thicker and waiting for it to cool COMPLETELY and then cutting it into bars. For bars, cook it to however crispy you like.

Vegan Tofu Scramble

This is a rather magical dish. It looks like eggs, it tastes like eggs, it's good for breakfast, it's good for lunch, and perfect for dinner as well. The turmeric gives it that yellow eeg-y cheesy kind of look and the silken firm tofu makes it "scrable" like real eggs. Add some veg and BINGO!! You've got yourself a low carb, vegan, protein-y, delicious, vitamin filled meal. Perfecto. I had this for breakfast this morning and mmmm it made the whole house smell de-lic-ious. And yes, "delicious" really does need to be broken apart like that to emphasize how de-lic-ious it really is. Enough with the raving, here's the recipe:
Vegan Tofu Scramble: 1 serving
- 4 oz silken firm tofu, (I used Mori-Nu Organic)
- 1/4 tsp of Turmeric
- 1.5 tsp chopped garlic
- about 1/2 tsp onion powder or a bit of fresh, chopped onion
- whatever veg you like! I used about 1/3 of a red bell pepper and maybe 1 cup of spinach
-oil


Chop up the tofu (not too small because it crumbles a bit when you're stirring it while it's cooking). Add seasonings and to the tofu and add a bit of oil/water to the pan. Saute/scramble on medium heat for about 30-45 seconds and then add your veg. Keep on scramblin' till the veggies aren't crisp anymore. Admire your creation and quickly devour it before the smell draws in any potential thieves. I recommend enjoying this with some fresh fruit, or whole grain toast, or even with some quinoa or couscous!

Almond Coconut Protein Pancakes!

Okay, I apologize, I am lacking a picture for this recipe :( buuuutttttt, that's ONLY because they were sososososo delicious that I gobbled them up before I could take a picture! Yes, they're THAT good. Anyways, enough of the jibber jabber, here's the oh so awesome recipe:
-1 scoop of protein powder of your choice (I used vanilla whey)
-3 egg whites
-1/2 tsp baking soda
-1/4 cup almond milk (or whatever milk you like)
-1/2 plus a teeeennnnyyy bit of coconut extract

Optional but recommended toppings: almond butter, shredded coconut or if you're feeling extra decadent, some whipped cream and dark chocolate chips..mmmm
Mix it all up with a whisk or in a blender aanndd cook like regular pancakes! I have always made it just as one monster pancake in a 9" frittata pan because I'm too lazy to make several smaller ones:) you want to make it kind of golden-y because if you over cook it, they get tough and no one likes tough pancakes. These would also be good with banana! I topped mine with a tablespoon of almond butter and they were divine!!!

Dinner...kinda

So dinner tonight was a bit of a fail. It turned out like this:

got a hold of it while I was searching high and low for my camera!! Whata sneaky boy! He loves him some veggies! Nom nom nom, delicioso (I've never taken Spanish, so I have no idea how to spell that:)) And, I'd share the recipe but there really wasn't one. Hehe. It was leftovers, I cheated:). I promise a real recipe soon though! I actually have one that I tried this morning and it was so delicious that I forgot to take a picture before I dug in! Well, I'm off to figure out something else for dinner:)

Hey There Pretty Thang!

Wow, first blog post. I feel so special:) I suppose I should give you the whole run down about this blog, but I'm not even sure. This blog will take me wherever it does and that's cool with me. But seriously, this'll probably become a blog where I post all of my delicious and healthy creations because well, that's what I want to do:) I'll probably post stuff about my life too though so, you can expect to hear a lot about me AND my food.That's all fr now
